Aloo Chaat

  1. 3 cups boiled, peeled and cubed potatoes
  2. 3 tbsp oil
  3. 2 tsp finely chopped green chillies
  4. 1/4 cup finely chopped coriander (dhania)
  5. 2 tbsp finely chopped mint leaves (phudina)
  6. 2 tsp grated ginger (adrak)
  7. 2 tsp chaat masala
  8. 1 tbsp lemon juice
  9. salt to taste
  10. 1 tbsp chopped coriander (dhania) for the garnish
  1. Heat the oil in a non-stick pan, add the potatoes and cook till they turn golden brown in color. Drain on absorbent paper and keep aside.
  2. Combine the green chillies, coriander, mint leaves and ginger and blend in a mixer to a smooth paste using a little water if required. Keep aside.
  3. Combine the potatoes, prepared paste, chaat masala, lemon juice in a bowl and toss gently.
  4. Serve immediately garnished with coriander.
